Instructions
Off the heat, pour in grits 80 g 50 cl of boiling milk, stirring rapidly with a wooden spoon.
Let simmer for 10 minutes, stirring occasionally.
Then add 150 g of grated emmenthal cheese or in pieces, a knob of butter, 3 egg yolks, salt, pepper, nutmeg, grated lemon rind.
When the dough is declined, combine 3 egg whites firm.
Pour the mixture into a greased soufflé mould oil and sprinkled with breadcrumbs.
Bake at medium heat for 30 minutes, until puffed up and Golden well on the surface.
Serve immediately with no draft.
