Barley soup (2)
Instructions
Peel onions and slice them thinly.
1 In saucepan heat the oil, add the onion and cook for 4 minutes, turning focus.
Pour about 100 cl of broth, bring to a boil, adjust salt and combine the barley making it cook over low heat for about 40 minutes.
Meanwhile, clean and chop the parsley.
When serving, sprinkle the soup with parsley and freshly ground pepper.

- 160 g of barley
- 2 onions
- 2 teaspoons of olive oil extra virgin
- Vegetable broth
- Parsley
- Salt
- Pepper
