Peel and cut potatoes into small cubes and celeriac.
Braise in a little finely chopped onion broth; Add potatoes, celery root, a little broth and Cook 20 minutes.
To restrict and blend everything together, add salt and pepper; stir in the grated cheese and turn off.
Distribute individual cups and finish with the sprouts and a drizzle of oil.
Serve with toasted bread croutons.
