Sauce gribiche
Instructions
Hard boil the eggs, collect the yolks in a bowl and mash well with a tbsp.
Add to the mix a teaspoon French mustard, a little vinegar, salt and pepper.
Begin to pour the oil as mayonnaise and working with a small whisk whip the sauce.
When it swells, add tarragon, parsley, finely chopped capers.
Stir gently.
Before joining completed table salsa diced egg whites.

- 3 eggs
- 1 teaspoon of french mustard
- 50 g of capers
- Parsley
- Tarragon
- Olive oil
- Wine vinegar
- Salt
- Pepper
