Barley soup (Minestrone D'orzo)
Instructions
Thoroughly wash the barley, pour it in a large pot, add 2 quarts of cold water, vegetables and bring to a boil.
Then let simmer for about 2 hours at moderate flame.
Peel and chop the onion, you beat all the herbs and prepare a sauce with these ingredients.
Add the barley and add fried potatoes peeled and cut into wedges, the scraped carrots, washed and sliced.
Add salt and pepper and cook for half an hour, yet always moderate focus and stirring occasionally.
When cooked, pour the soup into Bowl and sprinkle with the grated Parmesan.
Serve hot.

- 200 g of pearl barley
- 1 onion
- 1 potato
- 1 carrot
- 1 sprig of parsley
- Some leaves of marjoram
- 2 sprigs of rosemary
- 2 teaspoons of vegetable extract
- 3 tablespoons of parmigiano
- 2 tablespoons of olive oil extra virgin
- Salt
- Pepper
