Barley soup (Zuppa D'orzo)
Instructions
Leave to soak a couple of hours the barley in cold water.
Sciacqualo for good.
Put the mushrooms in a bowl.
Make a beat with lard (or possibly oil) and vegetables made into small pieces (not crushed).
Add barley, sala, cover with at least twice as much water and leads to a boil.
After an hour, add the drained mushrooms (throwing away the black acquaccia) and potatoes peeled and diced.
In Bowl, leaving there about 10 minutes before serving.
The dish is smooth, pleasant on the palate, nourishing and easy digestibility.

- 500 g of pearl barley
- 50 g of bacon (optional)
- 1 carrot
- 1 costa of celery
- 1 onion
- 1 great potato
- 100 g of dried mushrooms
