Avocado cream with cream
Instructions
In a small saucepan with the butter and gently fry the shallots, for 3-4 minutes.
Cut the avocado in half and remove the core and Peel.
Riducetene the pulp into small pieces and shake it with cream and fried shallots.
In a saucepan, boil the stock, add the mashed avocado and fitted with an immersion Blender to obtain a mixture is smooth and homogeneous.
Season the soup with salt and spices and let it cool to heat sweet, unboiled.
For the garnish Peel the half avocado and cut into thin slices.
Whip the cream until foamy and mix in a pinch of salt and sugar.
Spread the warm cream into cups and garnish with a slice of avocado and a spoonful of cream.
Complete with some almond flakes and serve immediately.
