Salt beef steak with sauce
Instructions
Spread the butter, sprinkle steak with plenty of pepper and salt, put it in a pan greased with butter abundantly and gilds it 2 minutes per side.
Place the Pan in the oven at 200 degrees already warm and finish the cooking: 15-20 minutes should be enough.
Passed the cost onto warm serving dish and allow it to rest before cutting it covered by an aluminium foil for 10 minutes.
Meanwhile, prepare the sauce: Saute over low heat in butter and minced shallots in oil; moisten with the wine, let it evaporate, add salt and pepper.
Withdrawn from the heat and stir the mixture one egg yolk at a time.
Add a tablespoon of chopped parsley and sprinkle of vinegar.
Heat without boiling.
Cut the sliced steak not so thin and serve with the sauce.

- 1 ox rib from 2500 g
- 80 g of butter
- Salt
- Pepper
- For the sauce:
- 6 shallots
- 40 g of butter
- 1/2 cup of dry white wine
- 2 egg yolks
- Wine vinegar
- Parsley
- Olive oil
- Salt
- Pepper
