Cardi with meat sauce
Instructions
Make a gravy by Browning the butter, onion, garlic, carrot, celery, parsley and finely chopped basil, then add the minced meat and sausage, then wet with flavour, half a glass of white wine and let it evaporate, then add the tomatoes.
Please return to a boil and cook over low heat for at least a couple of hours.
While the sauce is cooking, clean the Thistle and remove tough ribs and the filaments, then cut into long pieces two fingers and boil them in water and lemon juice for 1 hour and a half.
Once cooked the cardo and the sauce, grease a baking dish and then a layer of thistles, above put the sauce well, sprinkle with the grated Parmesan and so on until exhaustion ingredients.
Finish with a layer of Parmesan cheese and butter flakes.
Put in the oven until the surface is golden.

- 1 cardo of 1000 g
- 1 onion
- 1 clove of garlic
- 1 carrot
- 1 stalk of celery
- 1 sprig of parsley
- 1 sprig of basil
- 100 g of pulp of minced beef
- 50 g of fresh sausage
- 1/2 cup of white wine
- 400 g of peeled tomatoes
- Grated parmesan cheese
- Flour
- Lemon
- Butter
- Salt
