Asparagus and spelt soup

Popular recipe in the Veneto region, where they are cooked white asparagus.
However, it is also excellent with green ones.
Sauté chopped onion in a frying pan, a diced carrot, two stalks of chopped celery, parsley and fine chopped basil, add 150 g of spelt and cover with water; season with salt, pepper, red pepper and two bay leaves.
While the stock simmers, clean about 500 g of asparagus and cut into small pieces; Add to the soup still two chopped potatoes and asparagus.
Continue cooking for about an hour.
You need in the table with a drizzle of olive oil and grated Parmesan cheese for each diner.
