Cliff swordfish
Instructions
Cut four slices of swordfish from 200 g each and dip in the flour.
Then Brown in a pan with 100 g of butter, then put it in a baking dish, which will be kept warm.
Prepare the sauce in the Pan making brown butter with a little onion and a bit of garlic, then add the prawns mussels and clams, Cook a few minutes.
then Deglaze with white wine waiting long enough for it to evaporate; then add the tomato, chopped parsley, salt and pepper to taste.
Cook for about 10 minutes and pour this sauce over the fish, that way and ready to be served.
