Sauté the onions cut into thin slices in the butter, then add the sliced potatoes, another piece of butter, salt and pepper.
Cook, stirring gently from time to time.
Completed cooking, sprinkle with chopped parsley and serve with cooked pan-fried sofficini with a little oil.
