Ricotta Gnocchi (Gnocchi di Ricotta)
Instructions
Put the ricotta in a bowl and sbattetela with a wooden spoon to make it creamy.
Add 3 or 4 tablespoons of olive oil, eggs, a little salt, grated cheese, grated or minced ginger at the moment, some crushed cloves in a mortar, a pinch of nutmeg and, finally, the oatmeal, millet and flour.
Mix thoroughly and let stand for half an hour then refrigerate, then formed a cylinder with the dough and made the dumplings the size you want.
Bring to the boil salted water, lessatevi gnocchi and serve dry, having drained, with a topping of melted butter and Sage.
Ingredients and dosing for 4 persons
- 250 g of fresh ricotta
- Olive oil extra virgin
- 2 eggs
- Salt
- 3 tablespoons of grated parmesan cheese
- Ginger
- Some nails of pink
- 1 pinch of nutmeg
- 7 tablespoons of oatmeal
- 4 tablespoons of millet flakes
- 4 tablespoons of wholemeal wheat flour (type 2)
- 1 sprig of sage
- Butter
