Fish fumet (8)
Instructions
Put in the bottom of the pot all aromatic ingredients and cover them with the heads and bones of the fish.
Sprinkle with salt and cover with water, wine and lemon drops and then boil for 30 minutes.
Allow to cool and move to colander.
Ingredients and dosing for 4 persons
- Fish heads and bones
- 50 g of onion
- 1 sprig of parsley
- Thyme
- 1/4 leaf laurel
- 3 drops lemon juice
- 1/4 teaspoon of salt
- 60 cl of water
- 12 cl of white wine
