Fry the fillets in half the butter.
Should the fire and keep them warm.
In the same pan, melt the rest of the butter and fry the eggs.
Remove the meat with a spatula, round white with a knife and lay an egg on each thread.
Season with salt, pepper and garnish each plate with sprigs of fresh parsley.
