Beans in vinaigrette
Instructions
Keep the beans to soak overnight, then rinse very carefully and pour into a large pot in which you will put the garlic, tomatoes, parsley, Bay leaves, (of course rinsed for Benin) salt and oil.
Then, add water to cover them and let them cook for about 1-2 hours at very low flame.
When cooked, drain and let cool.
Meanwhile, prepare a vinaigrette with olive oil, salt, lemon juice and pepper.
Stir briskly all using a fork and pour it over the beans.
Let them soak for about 10 minutes and then serve.
Tip: I suggest you eat as a side dish, accompanying them with croutons.

- 300 g of beans
- 2 large cloves of garlic
- 4 cherry tomatoes
- 1 sprig of parsley
- 4 leaves of laurel
- Olive oil
- 1 lemon (juice)
- Chili powder
- Salt
