The italian leg of kid
Instructions
Lardellate the leg with some sticks of bacon.
In a pan heat three tablespoons of olive oil in saucepan over high heat and the kid.
Add salt and pepper.
Add the onion, garlic, carrot, celery and Rosemary.
Please add some minutes.
Add the wine, three tablespoons of the past and half cup water scarce.
Cook for an hour.
Remove vegetables from pan and blend.
The leg cut into small pieces, place on serving dish and nappateli with the smoothie.
Serve.
Accompanying wines: Red Roero DOC, Merlot DOC Colli Bolognesi, Montepulciano d'Abruzzo "old" DOC.

- 1000 g of leg of kid
- 100 g of bacon
- 50 cl of dry white wine
- 3 tablespoons of tomato paste
- 1 onion
- 1 garlic
- 1 celery
- 1 carrot
- Rosemary
- 3 tablespoons of olive oil
- Salt
- Pepper
