Squid on arugula
Instructions
Bring to the boil salted water with some grain of pepper, half of the parsley, Bay leaves and wine; Soak frozen squid and cook for 35 minutes.
Then drain and cut them into small pieces.
Mince the parsley with garlic; join the anchovy paste and diluted with oil and lemon juice; Add salt and pepper and pour the sauce on the fish.
Sprinkle with the arugula.
Ingredients and dosing for 4 persons
- 2 bottles of rings and clumps of frozen squid (300 g packs)
- 1 bunch of arugula salad
- 1 sprig large of parsley
- 1 clove of garlic
- 1 leaf of laurel
- 1 lemon
- 1 tablespoon of anchovy paste
- 1 glass white wine
- 4 tablespoons of olive oil
- Salt
- Peppercorns
