Soup with Winter Vegetables
Instructions
Deprive the cabbage of the toughest outer leaves, cut in half and remove the core.
cut it into strips and wash it thoroughly; Peel the carrots, wash it and cut it into rings; clean the celery, washed and cut into strips or small pieces; Peel the onion, wash it and cut it into thin slices.
Put in a pan with a little olive oil onion sliced and diced Bacon, Saute to moderate flame for a few minutes, stirring often with a wooden spoon; Add the cabbage, carrot, celery and cover with water (a litre and a half), a little salt and cook for 30 minutes at moderate flame.
Serve the hot soup after sprinkling it with the remaining oil and sprinkle with a pinch of freshly ground pepper.
accompany with lightly toasted bread croutons.
