Artichoke Soup (Zuppa di Carciofi)
Instructions
Clean the artichokes by removing the outer leaves, cut off the tops and we peel these stems.
Put them in cold water in which you have squeezed the lemon juice.
Apart from bring to a boil a liter of water with a pinch of salt; combine the aromas in a piece of canvas well tied up and Add drained artichokes along with celery, carrot and onion, cut into small dice.
Simmer in covered pot and, when cooked, wring well the aroma bag and throw it.
Serve in soup plates on lightly toasted bread slices.

- 12 artichokes
- 2 onions
- 2 lemons
- Thyme
- 2 leaves of laurel
- 1 stalk of celery
- 1 bunch of fennel
- 1 teaspoon of coriander seeds
- Olive oil extra virgin
- 1 == Pto Meeting
- Some slices of toasted bread
