Stuffed zucchini (2)
Instructions
Clean and wash the zucchini and boil them for a few minutes in salted water.
Cut them in half, remove much of the Central pulp and tritatene a third, eliminating the rest; mince the mushrooms.
In a little oil and butter, Brown the flesh of the squash, mushrooms and meat.
After a few minutes, remove from heat, add the egg, the breadcrumbs soaked in milk, the grated Parmesan, chopped parsley and a little salt.
Mix well the mixture and fill the zucchini, sprinkle of breadcrumbs, put on each a butter and place in a hot oven at 200-220 degrees for 15-20 minutes.
Serve warm or cold.

- 15 medium zucchini
- 300 g of mushrooms
- 400 g of minced beef
- 100 g of breadcrumbs
- 50 g of parmigiano
- 1 egg
- Milk
- 80 g of olive oil
- 50 g of butter
- 1 sprig of parsley
- Breadcrumbs
- Salt
- Pepper
