Instructions
Flour the slices of rump and brown them on both sides for a few moments in 20 g of butter.
Add salt, pepatele and place them in a buttered baking dish.
On each Escalope place 2 or 3 slices of tomato and a little diced mozzarella.
In a casserole put 30 g of butter and olive oil, water, de-boned and cut into pieces.
With the tines of a fork try to dissolve the anchovy butter, then pour the all about scallops; Sprinkle with a little oregano and put in a hot oven at 200 degrees for 7-8 minutes until the mozzarella has melted.
