Artichoke patties at red ox
Instructions
Clean artichokes and boil 15.
Once cooked, drain them, pass them through a sieve, put them back in the pan with 50 g of butter, a pinch of nutmeg, pepper and let Cook for 5 minutes.
When the mixture is still warm, add two egg yolks, 100 g of grated Parmesan and the two egg whites, mixing everything together.
Apart from preparing the phyllo: first mix 150 g flour 300 g butter and refrigerate.
Later, knead more 150 g flour with a pinch of salt and a little water to obtain a soft dough.
Remove the dough from the fridge first, spread it out and put the second dough, work it and fold it in the envelope so as to obtain the dough.
Leave it for 2 hours in refrigerator.
To prepare the patties, provide circular mould steel with a diameter of about 10 cm to 2 m high.
Prepare the dough with a sheet to cover the inside of the machine, fill with artichoke mixture and cover with a circular sheet of browse by closing with the fingers the two sheets.
Brush the patties made with egg yolk and put in the oven at 100 degrees for 35 minutes.
Unloaded when cooked and serve with fior di latte and cover.

- Hot mozzarella mozzarella to serve
