Cut the meat in thin slices instead (you should obtain eight).

Divide the slices of prosciutto and pancetta in check.
In a pan put a spoonful of olive oil and butter.

Leave the meat on the heat until the sauce is reduced.
Be careful not to attack the meat slices at the bottom of the Pan, then, from time to time, remove it with a fork.
If the gravy is cooking too little or too much liquid, you can work around the problem by adding a knob of butter mixed with a little flour.
If it does not suffice, even two or three tablespoons of milk.
The morsels served with a side of fries or roast baby peas with butter.
