Instructions
Peel, boil spinach without adding water.
Squeeze dry and season in a pan with half of the butter, then pass them through a sieve.
Prepare a bechamel with 20 g butter, 25 g flour, milk, salt, pepper, nutmeg.
Combine the spinach bechamel sauce and mix well, add the chopped cooked ham, egg yolks and egg whites.
Pour in buttered and floured mold and bake at 200 degrees for about 40 minutes in a Bain-Marie.
Let it rest and serve with grated Parmesan.
