Treviso radicchio in marinade
Instructions
Put to boil in a saucepan with half a litre of water, vinegar, salt, Bay leaves and the juniper berries.
When the mixture boils, soak for 3/4 minutes clean the radicchio and cut in half.
Roll it out on a towel to cool.
When it is cold, place the chicory in a bowl with the remaining spices and cover with oil.
Serve the next day.
May be accompanied by 2 thick-cut slices of suppressed.

- 4 heads treviso radicchio
- 6 leaves of laurel
- 10 berries juniper
- 20 cl of wine vinegar
- 1 glass of olive oil
- Salt
