Instructions

The chicken must be already cut into 5 pieces.

Salt and pepper the chicken pieces.

Cut the sausage into small pieces of 5 cm each.

Clean and wash the mushrooms, Pat dry and slice them up.

Peel and mince the garlic and the onion.

Do heat two tablespoons of oil in a large skillet.

Add 15 g of butter and sauté the garlic and onion for 7 minutes, stirring frequently with a wooden spoon until it becomes transparent.

Levateli with a skimmer and keep aside.

Put in place the mushrooms and sauté for 3 minutes until they are golden.

Remove them from the Pan using the skimmer.

Then in the same pan heat the remaining oil.

Add the rest of the butter and fry the chicken pieces for three minutes on each side.

Remove them from the Pan and keep warm.

Remove the fat from the Pan, pour the tomatoes with their juice and the tomato sauce and let simmer.

Add the garlic and the onion kept aside, mushrooms, chicken, sausage, and red wine.

Add salt and pepper, cover and let simmer for an hour over low heat until the chicken and sausage are cooked.

Put the chicken and the sausage on a hot serving dish and pour over the tomato sauce and mushrooms.

Brought immediately to the table.

Suggested wine: Trentino Merlot.
