Sautéed calamari
Instructions
Clean very well the squid, long wash under running water, then reduce the bags to 1 cm rings and tentacles into small pieces.
Place the whole in salted water with a splash of vinegar.
After 15-20 minutes, drain the squid, let them drain for a few minutes and put them to dry for a few minutes on a clean cloth; then sprinkle with flour and place them in a sieve to remove excess flour.
You heat the oil in a cast iron pan.
Fry the squid, a few at a time, in hot oil, turning constantly with a wooden spoon and keeping the flame allegra; as they are ready (should be golden and crispy), then toss them on a sheet of absorbent paper towel to remove the excess grease and keep warm on a serving dish.
To fry salted squid finished, Sprinkle chopped basil,, garnish with lemon wedges and serve immediately, well hot.
