Penne norcino style
Instructions
Put to cook the penne in abundant salted water and, in the meantime, heat oil and Brown the garlic.
Add the anchovy fillets and mash until you reduce cream, then remove the garlic and, away from the fire, add the finely chopped truffle.
Add salt and pepper stirring with a wooden spoon.
Drain the penne nicely al dente and put them in the dish, then seasoned with anchovy sauce and truffle.
Serve the dish hot.

- 1 black truffle

- 1 clove of garlic
- Some of anchovy fillets and desalted diliscati
