Minestrone soup with artichokes
Instructions
Prepare the broth by boiling 1 liter and a half of water with 2 nuts.
Clean the artichokes by removing the toughest outer leaves and tips, then soak them in salted water with the lemon juice.
Put in a saucepan with oil, 2 tablespoons parsley, onion, garlic, celery and chopped pancetta and saute over low heat, then add the artichokes, cut into slices and let them flavor.
Add the tomato paste, salt and pepper.
After 5 minutes add the broth; When it boils, add the pasta and bring it well cooking al dente.
Serve sprinkled with Parmesan cheese.

- 70 g of bacon
- 1 chopped onion
- 1 clove of garlic

- 200 g of type pasta ditalini
