Green Soup (Minestrina Verde)
Instructions
Boil spinach, mince, season in butter.
Let them cool.
Add eggs, cheese, add salt and pepper.
Lightly toasted slices of bread.
Dispontele in the bottom of a soup-tureen.
Pour the mixture into the boiling broth spinach, stir well and bake everything in the soup-tureen.
Serve.

- 500 g of spinach
- 30 g of butter
- 2 eggs
- 40 g of grated parmesan cheese
- 8 slices bread
- Salt
