Braised lettuce to bacon
Instructions
Boil a large pot of salted water.
Remove the leaves of lettuce, wash them without separating the leaves, cut them in two.
Emerge them in boiling water and let boil for five minutes.
Drain in a colander.
Remove the rind from the bacon and cut it into cubes.
Peel the carrots, wash them and cut them into fine slices.
Heat the oil, then butter, moderate focus.
Add the bacon, carrot and onions.
Simmer 5 minutes, stirring often.
Gently squeeze the lettuce between your hands to remove all water.
Place the lettuce in a single layer tight over the contents of the saucepan.
Add salt, pepper and the tuft of parsley.
Cover and simmer for fifteen minutes to fire.
Turn the lettuce, add one or two tablespoons of boiling water if they tend to attack, re-cover and simmer fifteen minutes still soft focus.
Serve very hot.

- 200 g of bacon
- 8 white onions
- 3 small carrots
- 20 g of butter
- 2 tablespoons of olive oil
- 1 sprig of parsley
