Tuna peppers roulade
Instructions
Roast peppers in oven at 180 degrees for one hour.
Retire it, Peel, open them, remove the seeds and pith, divide them into quarters, dry on a kitchen towel.
Meanwhile, in a bowl, mix the chopped tuna with onion and mushrooms, some chopped capers, desalted anchovies de-boned, water and cut into small pieces, parsley.
Mix the ingredients carefully sprinkling a bit of vinegar.
Spread the mixture on the coattails of pepper, roll them up tight and refrigerate until ready to serve.
Arrange the peppers in pairs of different colors in the serving dish, decorate with a tour of oil spilled.
Serve.

- 350 g of tuna
- 6 anchovy fillets
- 3 tablespoons of mushrooms in olive oil
