Boil the peas in broth, blend the mixture with the onion, place in a bowl, mix the egg yolks, brandy, tabasco, lemon juice and cream.
Mix well, add salt, pepper, add ice cubes, pour in individual plates, sprinkle with chopped parsley and serve.
