Boil the beans, season in half butter and pass them through a sieve.
In a saucepan melt butter, then add the milk, flour, salt, nutmeg and Cook, stirring, for about 5 minutes.
Combine the green beans, Cook for 10 minutes, add the broth and bring to a boil.
Sprinkle with chopped parsley and serve with croutons.
