Pour the milk into a saucepan, add the sugar, a pinch of salt and the grated lemon rind.
Bring to a boil and pour in the semolina rain mixing quickly.
Withdrawn, incorporate the butter and pitted cherries.
When the mixture is cold, mix one egg yolk at a time, and then the egg whites.
Pour into a buttered pan and bake in preheated oven at 180 degrees for 40 minutes.
