Spring soup
Instructions
Shelled both the beans and peas, Peel the artichokes, keeping them in water and lemon juice to avoid blackening, cut the onions into very thin slices, diced potatoes and Bacon into small pieces.
Place in a pot capacious well olive oil, bacon and scallions, I have mine fixed and use the crock, the lowest and a little bit wider, let these ingredients become just polishes and add then all others: first the beans, artichokes, fresh garlic and parsley, potatoes and peas.
And the casserole is rather extensive, so that things do not stifle.
Add two glasses of water, cover the saucepan and cook over mediumlow heat for an hour.
Almost finished cooking add the salt.
Before serving this soup, sprinkle with fresh chopped parsley.

- 500 g of new onions
- 2000 g of fresh fava beans
- 10 artichokes
- 100 g of bacon
- 1000 g of new potatoes
- 3000 g of shell peas
- Olive oil
- Parsley
- Fresh garlic
- Salt
