Crab soup
Instructions
Clean the crabs with a brush, wash them, slightly schiacciatene the carapace (or shell), put them in a pan in which you've made Brown, with oil and lard, sliced onions and crushed garlic.
Cook over moderate heat for a few minutes, add the tomato sauce, chopped parsley, pour a quart of water, add salt and pepper and simmer for 20 minutes.
In individual bowls you have stale bread slices toasted and a crab and pour the broth after it is filtered.
Ingredients and dosing for 4 persons
- 4 250 g crabs
- 2 cloves of garlic
- 300 g of tomato sauce
- == 1 small onion
- 1 sprig of parsley
- 10 cl of olive oil extra virgin
- 1 tablespoon of lard
- Salt
- Pepper
