Green beans and soup almonds
Instructions
In 1 litre of light broth (possibly chicken) boil 200 g green beans, cleaned and cut into pieces of about 3 cm.
Add salt, pepper and drizzle with the juice of 1/2 lemon.
A few minutes before serving add 60 g of peeled almonds, lightly toasted in a skillet with butter flake, 1 finely chopped or pounded in a mortar.
Tie the broth with 2 egg yolks whisked and paid in the broth without resume boiling.

- 200 g of green beans

- 1/2 lemon (juice)
- 60 g of peeled almonds
- 1 tassel of butter
- 2 egg yolks
