Rustic Soup (Zuppa Alla Rustica)
Arrange the slices of bread on the oven dish and put them in a hot oven (200 degrees) until they are slightly browned.
Melt the butter in a saucepan over moderate heat and add the flour mix with a whisk to avoid lumps forming.
Let Cook until the flour has caught a nice golden color, then wet the mixture with a ladle of broth and insaporitelo with salt necessary, ground pepper and finely chopped shallots.
After that, pour the rest of the broth into another saucepan and bring it to a boil, add the mixture of butter and flour, stir to mix well and simmer fresh focus for about 15 minutes.
At the end add a handful of grated Parmesan cheese and half a tablespoon of chopped parsley, transferred the preparation in a soup-tureen, add the toasted bread slices and serve.
