Instructions

Clean all the vegetables.

Cook leeks and onions in oil with diced potatoes and peeled and crumbled sausage.

After 15 minutes, add the broth and simmer for 30 minutes.

Boil separately, chop spinach and pour in the soup.

After a few minutes of boiling, add the rice and bring it to cooking.

Before serving the soup season it with 2 tablespoons of pecorino, a ground pepper and a little olive oil.
