Instructions

In A double boiler with water brought to a boil and then put to a minimum.

In a bowl beat eggs with energy, join two pinches of salt, plenty of chopped pepper and cream.

You put in a water bath and when I curdled, introducing gradually the 40 g of butter.

Serve in small bowls with grated truffle.
