Instructions
Clean and wash under running water spinach, drain and put them in a large pot with the only water that remains on the leaves.

Do heat the olive oil in a pan, put the spinach and sauté them quickly; Add the pepper and, if necessary, a little salt.
Place spinach in 4 small dishes or pans; Press the center of each bowl with the back of a spoon to form a recess; lay an egg, sprinkle with grated cheese and bake the mixture in a preheated oven at 180 degrees for 4-5 minutes.
Serve hot.
