Instructions

Finely chop the onion and dice the bresaola.

Beat the eggs with salt and pepper.

In a cast iron pan melt the butter and fry the onion.

Join the bresaola and sauté for a few minutes.

Pour the eggs and raise the flame.

Cook stirring until the eggs are slightly curdled.

Serve hot with toasted bread.
