Bowl of octopus, shrimp and leeks
Instructions
Line a mould from plum-cake with Leek leaves, place the chopped Octopus into small pieces, shrimp tails and fillets of sole.
Fill the mould with the cold vegetable broth, in which melted the isinglass soaked already, put in the fridge to firm.
For sformarla, dip the mold for a few seconds in hot water.
Ingredients and dosing for 8 persons
- 1000 g of boiled octopus
- 200 g of shelled shrimp tails and boiled
- 2 leeks blanched
- 3 sole fillets rolled and steamed
- 50 cl of vegetable broth
- 30 g of isinglass
