Stracciatella (4)
Instructions
Pour into a bowl the eggs, parmesan, grated nutmeg and grated lemon rind.
Beat all vigorously with a fork or a whisk.
Pour everything into the pot with hot oil and broth and bring to a boil.
Mixed and stirred with a fork, forming tiny bits (stracciatella).
Leave again for another 2 minutes on moderate flame and serve hot.

- 200 cl of meat broth
- 4 eggs
- 100 g of grated parmesan cheese
- 1 rub of nutmeg
- Olive oil extra virgin
- Salt
- == 1 lemon (zest)
