Instructions

Prepare well washed spinach.

Put water dripping into a pot and let them boil for 15 minutes.

Drain, squeeze and pass them to the vegetable mill.

Place them in a pan with 50 g of butter and seasoning.

Add flour, cream, broth, a pinch of grated nutmeg and salt.

Stir until boiling; then bake at moderate fire and, before serving, add some butter.
