Mutton stew with beans
Instructions
In a pan left melt a knob of butter and meat to saucepan, cut into pieces.
Add the carrots and onions cut into thin slices, whole garlic, thyme and Rosemary.
Add salt and pepper.
When the meat is very colourful with add a ladle of water.
Cover and cook on moderate fire for half an hour.
Add fresh beans boiled al dente, or those in Tin with a little of their cooking water.
Cook for 45 minutes at moderate flame.

- 600 g of the shoulder of mutton
- 600 g of fresh beans
- 1 walnut butter
- 2 onions
- 2 carrots
- 2 cloves of garlic
- Thyme
- Rosemary
- Salt
- Pepper
