Cauliflower Pudding (Sformato di Cavolfiore)
Instructions
Peel, cut and wash the florets of cauliflower.
Boil, drain very well and let them Brown in a pan with a knob of butter.
Add salt, pepper, pour in half the milk and leave to absorb.
When the mixture will be quite dry, remove from heat and pass through a sieve.
Make the béchamel sauce, season with nutmeg, salt and pepper.
Withdrawn from the fire.
Add one egg at a time, the grated Gruyere cheese, cauliflower puree, mix and pour into a buttered pan.
Bake in a water bath in a preheated oven at 180 degrees for one hour.
Withdrawn, please rest a few minutes, then remove from pan and on the serving dish.

- 30 g of butter
- 80 g of gruyere cheese
- Bechamel
- 3 eggs
- 1 glass of milk
