Instructions

Peel the chicory discarding outer leaves harder and leaving only a bit of stem.

Wash, drain them and divide each tuft in 4 segments.

Dry it, put it on a plate and season with oil, salt and pepper.

Let it stand for about 10 minutes before putting it on the grill.

Ideally, the wood fire but you can also use the cast iron plate or the grill of the oven.

Let it cook 2-3 minutes per side, pennellandolo with the seasoning.

Serve hot as a side dish for roasted or grilled meats.

A richer version of roasted chicory plans to wrap each slice with a thin slice of bacon before putting it on the fire.

In this case the chicory must not be seasoned with oil.
